Polenta Bread (Taken with instagram)
Corn kernals working their way into the 8 inch mill for a small batch of our “Traditional Corn Meal” ordered by Claremont Spice and Dry Goods.
Being hungry in the bakery is never a problem. I fried some eggs in olive oil in the dying embers from the morning fire. Topped an extra one of our pre-baked Pizza Shells with left over pasta sauce from the night before, and some shredded mozz. Then tossed on the fried eggs to melt everything together.
For fried egg on pizza, I like to pre-cook the eggs about 70% then slide them onto the pizza to finish them. Trying to cook them on the pizza will leave too much uncooked egg white for my liking.
